Caramel Cookie Dough Balls - DF & GF

Soft, chocolate-y and oh-so-caramel. These dough balls are the perfect combination of salty caramel and sweet but without the bad stuff! They're gluten-free and dairy-free making them the perfect sweet snack on the go or while you're in lockdown. 
I don't know about you, but I seriously crave cookie dough. Not cookies. Screw cooking them. Just the dough! 

Mum and I definitely agree that baking often gets ruined in the oven. So I was desperate to make a raw bliss ball recipe which encapsulates the deliciousness of cookie dough without the bad stuff. These GF & DF caramel cookie dough balls definitely hit the spot.

Caramel Cookie Dough Balls:

Makes 10 - 15 small balls

1 1/2 cups raw cashews
1 cup pitted dates
1/2 cup almond meal
1 tbsp maple syrup
1 tsp pink Himalayan salt 
1 tsp vanilla extract
1/2 cup roughly chopped dark chocolate (over 50% cocoa is usually DF - we use the Whittaker's Dark Block)

1. Boil the jug. In a heatproof bowl, combine your cashews & dates. Once the jug has boiled, cover with hot water and leave to soak for approx. 10 minutes or until softened. 

2. In a food processor, add your softened dates & cashews, almond meal, maple syrup, salt, and vanilla. Mix until evenly combined, using a spatula to scrap the sides frequently. 

3. Fold through the chocolate chunks using the spatula until combined. 

4. Roll into small, even ball sizes. Keep in the fridge for approx. 1 week (but they certainly won't last that long!)

You may find that these dough balls are slightly softer than your typical bliss balls, this is because I'm going for a more true 'dough' texture which mirrors a cookie dough experience. However, if you prefer a denser mixture, play around with the cashews and almond meal ratio. This may lessen the 'caramel' taste from the dates so do so with caution!
